The Ultimate Strawberry Cheesecake Cake Recipe

Recipe Components
For the Cheesecake Layer:
- 450g or 16 oz cream cheese Philadelphia type, softened
- ½ cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- ½ cup sour cream
For the Strawberry Cake Layers:
- 2 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 egg whites
- 1 tbsp vanilla extract
- 1 cup whole milk
- ½ cup fresh or frozen strawberry purée
- Pink food coloring
Ingredients for the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 2 tbsp heavy cream
For Decoration:
- Fresh strawberries
- Strawberry sauce
Instructions
Make the Cheesecake Layer
- Preheat the oven to 163 °C (325 °F). Line a 9-inch (23 cm) spring form pan with parchment paper and lightly grease.
- Beat cream cheese and sugar until smooth, then add eggs, one at a time, mixing well.
- Stir in vanilla and sour cream, then pour the batter into the pan.
- Bake for 35–40 minutes, or until the center is set. Let cool completely, then refrigerate for at least 2 hours.
Prepare the Strawberry Cake Layers
- Preheat the oven to 175 °C (350 °F). Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat butter and sugar until light and fluffy and add
- egg whites, one at a time, then mix in vanilla extract.
- Gradually add the flour mixture, alternating with milk, beginning and ending with the flour.
- Stir in strawberry purée and add pink food coloring if desired.
- Divide the batter between the pans and bake for 25-30 minutes. Let cool completely.
Prepare the Frosting
- Beat cream cheese and butter until smooth.
- Gradually add powdered sugar and beat until fluffy.
- Stir in vanilla extract and heavy cream.
- Assemble the Cake
- Place one strawberry cake layer on a serving plate and spread a thin layer of frosting.
- Carefully place the cheesecake layer on top.
- Add the second strawberry cake layer, then frost the entire cake.
- Decorate with fresh strawberries and strawberry sauce if desired.
Step 5: Chill and Serve
- Refrigerate for at least 1 hour before slicing.
