Components :
For the cupcakes :
1 1/4 cups 160g all purpose flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup 115g unsalted butter, softened
3/4 cup 150g granulated sugar
1 large egg
1 tsp vanilla extract
1/2 cup 120ml whole milk or buttermilk for extra tang
For the frosting:
1/2 cup 115g unsalted butter, softened
1 1/2 cups 180g powdered sugar, sifted
1 tsp vanilla extract
1–2 tbsp heavy cream or milk adjust for consistency
Food coloring optional
Sprinkles for decoration optional
Instructions :
For the cupcakes :
Preheat oven: Preheat your oven to 350° F 175°C and line a mini cupcake pan with mini cupcake liners.
Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Cream butter and sugar: In a large bowl, beat the butter and sugar together with an electric mixer on medium speed until light and fluffy, about 2 to 3 minutes.
Add egg and vanilla : Beat in the egg and vanilla extract until combined.
Combine wet and dry: Add half of the dry ingredients to the wet mixture, followed by half of the milk. Mix until just combined. Repeat with the remaining dry ingredients and milk. Do not overmix.
Fill the liners: Divide the batter evenly among the mini cupcake liners, filling each about 2/3 full.
Bake for 10 to 12 minutes, or until a toothpick inserted in the center comes out clean. Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
For the frosting :
Beat butter: In a large bowl, beat the softened butter until creamy, about 2 minutes.
Add powdered sugar: Gradually add the powdered sugar, beating on low speed until combined.
Add vanilla and cream : Mix in the vanilla extract and 1 tablespoon of cream. If the frosting is too thick, add more cream until it reaches your desired consistency.
Color and decorate: If using food coloring, mix it in now. Pipe or spread the frosting onto the cooled cupcakes and decorate with sprinkles if desired.
