Components :

  • 1.5–2 lbs steelhead trout fillet skin-on is great
  • 3 cloves garlic, minced
  • 4 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 1 lemon zested and juiced
  • 1 tsp paprika optional, for some color
  • 2 tbsp fresh parsley or dill, chopped or both
  • Salt and freshly cracked black pepper to taste
  • Lemon slices, for garnish

Instructions :

1. Preheat the oven.

Set it to 375°F (190°C). Line a baking sheet with parchment paper or aluminum foil less mess, more finesse.

2. Prepare the fish.

Lay the steelhead trout fillet skin-side down on the lined baking sheet. Pat it dry with paper towels to remove any excess moisture.

3. Make the garlic butter.

In a small bowl, mix the melted butter, olive oil, minced garlic, lemon zest, lemon juice, and paprika. Whisk it like you mean it.

4. Season the fish.

Sprinkle the trout generously with salt and pepper, then brush or spoon the garlic butter mixture all over the fillet. Be sure to coat it evenly—you want all that flavor to soak in.

5. Bake it.

Pop the trout in the oven and bake for 15–20 minutes depending on the thickness . The fish is done when it flakes easily with a fork and is just opaque in the center.

6. Finish strong.

Once it’s out of the oven, sprinkle the fresh parsley or dill on top for that pop of green and extra flavor. Garnish with lemon slices for a little flair.
