- For the sauce :
- 3 tbsp tamarind paste. or lime juice if you can’t find it
- 3 tbsp fish sauce. or soy sauce for vegetarian
- 1½ tbsp palm sugar. or brown sugar
- 1 tsp chili flakes. adjust for spice level
- For the stir-fry :
- 200g rice noodles
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 shallot, thinly sliced
- 200g shrimp, chicken, tofu, or a mix. your call
- 2 eggs, lightly beaten
- 1 cup bean sprouts
- 3 green onions, chopped. white and green parts separated
- Garnish :
- ¼ cup roasted peanuts, crushed
- Lime wedges
- Fresh cilantro
- Extra chili flakes
Instructions :
- Prepare the noodles :
Soak rice noodles in warm water for about 20-30 minutes until soft but not mushy. Drain and set aside. - Make the sauce :
In a small bowl, mix tamarind paste, fish sauce, palm sugar, and chili flakes. Stir until sugar dissolves. - Cook the protein :
Heat 1 tbsp oil in a large wok or skillet over medium-high heat. Add shrimp, chicken, or tofu and stir-fry until cooked. Remove from the pan and set aside. - Build the flavor base :
Add another tbsp of oil to the pan. Toss in garlic, shallots, and the white parts of green onions. Sauté for 30 seconds until fragrant. - Scramble the eggs :
Push the garlic mixture to one side and pour the beaten eggs into the pan. Let them set slightly, then scramble them. - Combine everything :
Add the softened noodles and sauce to the pan. Toss well to coat. Add cooked protein, bean sprouts, and green onion greens. Stir-fry for another 2-3 minutes until everything is hot and evenly mixed. - Serve and slay :
