Chicken Broccoli Rice Casserole

Ingredients
  • 2 cups cooked chicken, shredded or diced
  • 3 cups cooked white or brown rice
  • 2 cups fresh or frozen broccoli florets, steamed
  • 1 can 10.5 oz cream of chicken soup (or cream of mushroom for variation
    1 cup milk
    1 cup shredded cheddar cheese (plus extra for topping
    1/2 cup sour cream
    1 tsp garlic powder
    1/2 tsp onion powder
    1/2 tsp paprika (optional)
    Salt and pepper to taste
    1/2 cup breadcrumbs or crushed Ritz crackers (optional topping)
    2 tbsp melted butter (for topping)
Instructions
  1. Preheat the oven to 375°F 190°C . Grease a 9×13-inch baking dish.
  2. Prepare the base : In a large mixing bowl, combine the cooked chicken, rice, steamed broccoli, cream of chicken soup, milk, shredded cheese, sour cream, garlic powder, onion powder, paprika, salt, and pepper. Stir until well blended.
  3. Assemble the casserole : Spread the mixture evenly into the prepared baking dish.
  4. Add the topping : If using, mix the breadcrumbs or crushed crackers with melted butter. Sprinkle this mixture or additional shredded cheese over the top of the casserole.
  5. Bake : Place in the preheated oven and bake for 25-30 minutes, or until the casserole is heated through and bubbly around the edges.
  6. Serve : Let it cool for 5 minutes before serving.
